Super Easy Pancake Batter Recipe (Finnish Style)

Here’s my version of Finnish style pancake batter recipe:

5 dl milk
2-3 eggs (2 big eggs or 3 small)
3 dl all purpose flour
3 tbsp sugar
1 tsp salt
Oil for frying

~1 tsp vanilla sugar

– Mix the eggs
– Add about half of the milk (this way it’ll be easier for you to mix the flour in)
– Add sugar and salt
– Mix well
– Add flour and mix until smooth
– Add the rest of the milk and mix well
– Place the batter to the fridge for 10-30 minutes (Everyone always says that the flour will swell and the composition of pancakes will be better. I figured to mention that here in the case that someone didn’t hear that already)
– Fry with medium to strong heat (Of course depending on your stove etc.)

Eat with:
Whipped cream and strawberry jam/ raspberry jam (raspberry is my favorite), syrup or just simply with sugar.
